Okay, Jackson thinks banana bread is the cats pyjamas. So, i can magically hide healthy things in it. So far, I've tried spinach. He totally fell for it. Yes! Actually, it tastes pretty darn good. I added 1/4-1/3 cup of chopped spinach to the recipe (an old banana bread recipe will do), and you really couldn't taste it once it was cooked. I'm going to add more next time, keep experimenting to find out just how much i can put in.
Unfortunately, Jackson is a picky eater, and this is what it has come to. Until about 11 months old, he would eat anything you put in front of him. Now he eats; oatmeal, avocado on toast, pb&j, grilled cheese, bananas, apples, sweet potatoes, cheerios, any cracker on earth, eggs (like 1/2 an egg), cheese, raisins, yogurt, sometimes 1 piece of broccoli, or a tiny bit of carrot. It's no too bad, but pretty limited, and he won't even try most meat. But, the doc says he's healthy as a horse (he's still gaining a pound a month in his second year, which he didn't even do his first year), so we'll let him figure this whole food thing out on his own terms.
